Palava Sauce with Goat Meat using Safari Simmer
A rich and flavorful Palava Sauce made with tender goat meat, chopped spinach, and Safari Simmer Tomato Stew. The stew’s bold spices—curry, paprika, and anise—combine to create a hearty dish that pairs perfectly with rice, yam, or plantains. Quick, easy, and packed with authentic African flavor
Ingredients
- 1/2 jar safari simmer tomato stew
- 1 lb cooked goat meat/beef – precooked/fried
- 3 cups previously frozen spinach thawed and drained
- 1 cup ground melon seeds egusi
- 1-2 cups water as needed
- 2-3 tablespoons palm oil or cooking oil
- Salt and pepper to taste
- Optional: Pepper packet for heat
Instructions
- In a large pot, heat the palm oil over medium heat.
- Stir in the jar of safari simmer tomato stew and cook for about 5 minutes, allowing the flavors to meld.
- Add the cooked goat meat to the pot and mix well. If the mixture is too thick, add water to achieve your desired consistency.
- In a small separate bowl, mix 1 cup of ground melon seeds with 3 eggs (eggs can be beaten prior to adding). Gradually add water until the mixture reaches a medium-thick consistency.
- Pour the melon seed and egg mixture into the sauce. Allow it to cook on low to medium heat undisturbed for 2-3 minutes then stir occasionally, until the mixture is cooked through and forms clumps in the sauce.
- Stir in the thawed and drained spinach, cooking for another 10-15 minutes until everything is heated and cooked through. (see below for fresh spinach qty)
- Add salt, pepper, and optional Safari Sunset Heat blend to taste. Adjust the consistency with more water if needed.
- Serve hot with rice, yam, plantains, or your favorite side dish.
Notes
- If ground melon seeds aren’t available, simply substitute with 3 beaten eggs. Allow the eggs to cook undisturbed for about 3-5 minutes before stirring for the best texture!
- Goat meat can be added either simply boiled with seasoning or fried after boiling for extra flavor!
- For fresh spinach in your palava sauce, you’ll need 2.5 lbs of uncooked spinach
