Ingredients

  • 3 large boneless skinless chicken breasts
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 6 tablespoons all-purpose flour
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 3 garlic cloves minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 teaspoon Safari sunset heat blend
  • ½ jar Safari simmer tomato stew
  • 1 tablespoon fresh basil chopped

Instructions

  • Sprinkle the chicken breasts with salt and pepper, then coat them lightly in flour, shaking off any extra.
  • Heat olive oil and melt butter in a large skillet over medium heat. Swirl the pan to combine.
  • Brown the chicken for 4-5 minutes per side until golden and fully cooked. Work in batches if necessary to avoid overcrowding.
  • Transfer the chicken to a plate and cover to keep warm.
  • Add minced garlic to the same skillet and sauté for about a minute until aromatic.
  • Pour in the chicken broth and scrape the bottom of the pan to release any browned bits.
  • Lower the heat to medium-low and stir in the heavy cream and Parmesan cheese.
  • Let the mixture simmer for a few minutes, then season with Safari sunset heat blend and additional salt and pepper if needed.
  • Stir in the Safari simmer tomato stew, then return the chicken to the skillet.
  • Allow the sauce to simmer and thicken for a few more minutes, ensuring the chicken is well coated.
  • Garnish with freshly chopped basil before serving.
