One Pot Jollof with vegetables and chicken

INGREDIENTS:

  • 1/2 jar Safari Simmer sauce (16 oz)
  • 315 ml (11 fl. oz) of water
  • 2 cups rice (different cook times for different types of rice)
  • Chicken drumsticks
  • Salt
  • pepper
  • Garlic powder
  • Paprika
  • Olive oil

INSTRUCTIONS:

  •  Season your chicken drumsticks with salt, pepper, garlic powder and paprika to taste. Brown in olive oil on the stove for about 5-10 minutes. 
  • Remove chicken and set aside.
  •  Make the rice per your instructions (I did a 1/2 recipe). Rice + water and seasoning. After 20 minutes in the overnight put in the chicken and the peas
  • Preheat the oven to 450°F.
  • Wash the rice until the water runs clear.
  • In an oven-safe bowl or a 12 x 10 foil pan, combine the rice, 1/2 jar of Safari Simmer sauce, Pepper packet (optional) and water.
  • Stir until the water and sauce are evenly distributed.
  • Cover the bowl tightly with foil. For a secure seal, overlap two pieces of foil.
  • Place the bowl in the oven and bake for 20 minutes.
  • Remove from the oven and stir the rice to even out the color. Add in Chicken and peas. 
  • Return to the oven and bake for an additional 15 minutes.
  • Add a splash more water is needed to make the rice tender (add 30 -50 ml at a time if extra water needed). 
  • Remove, serve, and enjoy!
