Savory Stuffed Bell Peppers
INGREDIENTS:
- 1 jar Safari Simmer tomato stew (16 oz)
- 4 large bell peppers (any color)
- 1 lb (450g) ground beef
- 1 cup cooked rice (white, brown, or any variety you like)
- 1 cup shredded cheese (cheddar, mozzarella, or your favorite) -optional.
- 1 tbsp olive oil (for sautéing)
- Fresh parsley or basil (optional, for garnish)
INSTRUCTIONS:
Prepare the Peppers:
- Slice the tops off the bell peppers and remove the seeds and membranes.
- If needed, trim the bottom slightly to make them stand upright, but avoid cutting through.
Cook the Filling:.
- In a large skillet, add the ground beef to the skillet and cook until fully browned. Drain any excess fat.
- Stir in safari simmer tomato stew and cooked rice. Mix well and cook for another 2-3 minutes to combine flavors.
Stuff the Peppers:
- Spoon the beef and rice mixture into each bell pepper, packing it in gently.
Assemble in Crockpot:
- Pour the beef broth or water into the bottom of the Crockpot. This will help keep the peppers moist as they cook.
- Place the stuffed peppers upright in the Crockpot.
Cook:
- Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the peppers are tender and the filling is heated through.
Add Cheese (optional step) :
- About 30 minutes before serving, sprinkle shredded cheese on top of each stuffed pepper, and cover again to allow the cheese to melt.
Serve:
- Garnish with fresh parsley or basil if desired.
- Serve hot and enjoy!
