Savory Stuffed Bell Peppers

INGREDIENTS:

  • 1 jar Safari Simmer tomato stew (16 oz)
  • 4 large bell peppers (any color)
  • 1 lb (450g) ground beef
  • 1 cup cooked rice (white, brown, or any variety you like)
  • 1 cup shredded cheese (cheddar, mozzarella, or your favorite) -optional. 
  • 1 tbsp olive oil (for sautéing)
  • Fresh parsley or basil (optional, for garnish)

INSTRUCTIONS:

  • Prepare the Peppers:

    • Slice the tops off the bell peppers and remove the seeds and membranes.
    • If needed, trim the bottom slightly to make them stand upright, but avoid cutting through.
  • Cook the Filling:

    • In a large skillet,  add the ground beef to the skillet and cook until fully browned. Drain any excess fat.
    • Stir in safari simmer tomato stew and cooked rice. Mix well and cook for another 2-3 minutes to combine flavors.
  • Stuff the Peppers:

    • Spoon the beef and rice mixture into each bell pepper, packing it in gently.
  • Assemble in Crockpot:

    • Pour the beef broth or water into the bottom of the Crockpot. This will help keep the peppers moist as they cook.
    • Place the stuffed peppers upright in the Crockpot.
  • Cook:

    • Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the peppers are tender and the filling is heated through.
  • Add Cheese (optional step) :

    • About 30 minutes before serving, sprinkle shredded cheese on top of each stuffed pepper, and cover again to allow the cheese to melt.
  • Serve:

    • Garnish with fresh parsley or basil if desired.
    • Serve hot and enjoy!
