Chicken Tomato Stew

- 1 scotch bonnet or habanero/ pepper packet if extra heat is needed
- 1 lb chicken drumsticks
- 3 jars of Safari Simmer tomato stew
- 3-4 bell peppers chopped (red, yellow or green )
- 1-2 cups of chicken broth or water to thin out sauce to desired thickness
Chicken seasoning
- 5 tbsp of garlic powder
- 2 tbsp of ginger powder
- 5 tsp of paprika
- 1 tsp of cumin optional
- Vegetable oil for frying or sprinkling for air fryer
- salt and pepper to taste
Reheat all 3 jars of safari simmer tomato stew over medium heat for 5-10 minutes.
Gradually stir in 1 cup of water or chicken broth until you reach your desired thickness.
Cook for another 5 minutes until mixed and bubbling.
Add chopped peppers and simmer for 5-10 minutes.
Stir in pre-cooked chicken drumsticks and let simmer on medium-low for 10 minutes.
Turn off the heat, serve over rice, pasta, or noodles, and enjoy!
